Description
One of the coolest wildflowers I have encountered on my land here in rural Oklahoma is the Salsify, also known as the yellow goats beard or the oyster plant. They also come in a purple variety but I have never seen one that color. They belong to the aster family and one of the coolest things about them is the huge fluffy seed heads that resemble giant dandelions. Also they have a very interesting flower structure when viewed at extreme close range as you can see from this digital oil painting I made using a macro photo that I took. The yellow variety while still having edible roots and stems is said not be be as tasty as the purple variety so I was always looking for a purple one to see if they really taste like oysters.
